  • Bran flakes - 2 cups
  • Plain flour - 1 cup
  • Banana, mashed - 1
  • runny honey - 1/4 cup
  • Egg - 1
  • Reduced fat milk - 1 cup
  • Baking soda - 1/2 tsp
  • Olivani, melted - 20 g
  • Frozen or fresh blueberries, plus a few for the top - 1 1/2 cups

  1. Preheat oven to 180°C (160°C fan-forced). Lightly grease a 12 hole muffin tray.

  2. Add the bran flakes and flour into a large bowl. In another bowl add the banana, honey, egg, and milk. Add the baking soda to the olivani, then add to the other wet ingredients. Pour into the flour mixture, stirring gently to combine.

  3. Stir through the blueberries slowly so as not to over mix the batter. Spoon the mixture evenly into the muffin tin. Top with a few extra berries if desired.

  4. Bake for 20 minutes until just set in the middle. Remove from the oven and leave to cool in the tin.

Tip: Wrap the freeze individually ready for school lunches.
