Ingredients
- Bagels, halved horizontally - 2
- Olive oil, plus 1 Tbsp extra - 1 Tbsp
- Garlic, onion and herbs pizza sauce - 1/3 cup
- Cherry bocconcini, halved - 8
- Mixed baby tomatoes, halved - 100 g
- Basil leaves, to serve
Method
Preheat grill to high; position the shelf to sit at the top third of the oven. Line an oven tray with baking paper.
Brush bagel halves with oil; place on tray. Grill for 1 minute each side or until golden; remove from oven. Cool slightly.
Spread each bagel half with pizza sauce. Top evenly with bocconcini and tomatoes; drizzle with extra oil. Grill for 3 minutes or until cheese melts and tomatoes soften slightly. Scatter pizzas with basil leaves to serve.
Tip: Make bagel pizzas the day before; store, covered, in the fridge. Add the basil just before packing into lunch box.
