Kids will love these Chickpea Wraps, a quick and easy snack or meal that's also full of good, and perfect for the lunchbox.

Ingredients

  • Wholemeal or multigrain wraps - 4
  • Baby lettuce leaves - 1 cup
  • Stalk celery, sliced - 1
  • Small red capsicum, sliced thinly - 1
  • Lebanese cucumber, sliced into ribbons - 1
  • Canned corn kernels, drained - 125 g
  • Store-bought lightly salted crispy chickpeas - 200 g
  • Pumpkin & kumara hummus - 1/2 cup

Method

  1. Place wraps on a chopping board; spread evenly with hummus.

  2. Divide lettuce leaves, celery, capsicum, cucumber, corn and chickpeas among wraps. Fold in sides and wrap up tightly to enclose filling.
