Strawberry and Rhubarb Smoothie

Light, refreshing and perfect for those summer afternoons. Check out this strawberry rhubarb smoothie recipe. Easy to make, and super healthy!

Ingredients

  • Rhubarb stalk - 1
  • Strawberries (1 punnet) - 250 g
  • Coconut milk - 1 cup
  • Banana, peeled - 1
  • Honey - 1 tsp
  • Ice - 1 cup

Method

  1. Remove leaves from the rhubarb stalk. Chop the stalk into 2cm lengths.

  2. Hull the strawberries by removing the green cap and leaves.

  3. In a blender, add all ingredients. Blend until well combined and not too lumpy.

  4. Pour into serving glasses and garnish with a strawberry.

Tip: You can use any berries you like, instead of strawberries. Also, use frozen strawberries instead of fresh when they are not in-season!
