Ingredients
- Rhubarb stalk - 1
- Strawberries (1 punnet) - 250 g
- Coconut milk - 1 cup
- Banana, peeled - 1
- Honey - 1 tsp
- Ice - 1 cup
Method
Remove leaves from the rhubarb stalk. Chop the stalk into 2cm lengths.
Hull the strawberries by removing the green cap and leaves.
In a blender, add all ingredients. Blend until well combined and not too lumpy.
Pour into serving glasses and garnish with a strawberry.
Tip: You can use any berries you like, instead of strawberries. Also, use frozen strawberries instead of fresh when they are not in-season!
