Classic Spaghetti Bolognese

Ingredients

  • Olive oil - 2 Tbsp
  • Onion, chopped finely - 1
  • Garlic, crushed - 3  cloves
  • Minced beef - 500 g
  • Chopped fresh herbs eg oregano, rosemary, thyme - 1/4 cup
  • Chopped tomatoes - 400 g
  • Water - 1/4 cup
  • Tomato paste - 1/4 cup
  • Red wine (or beef stock) - 1/2 cup
  • Lemon zest - 1 Tbsp
  • Chopped parsley - 1/2 cup
  • Grated Parmesan - 1/2 cup
  • Spaghetti - 400 g

Method

  1. In a large frying pan, heat the oil. Add the onion and garlic cooking, for 4 minutes to soften.

  2. Add the mince, breaking up with a spoon and cooking until lightly brown and the juices have all evaporated.

  3. Add the herbs, tomatoes, water, tomato paste, wine and lemon zest. Combine well and allow to a simmer for 15 minutes.

  4. While the bolognese sauce thickens, cook the spaghetti as per the packet instructions. Drain.

  5. Fold the parsley through the bolognese sauce and season to taste. Serve hot with a sprinkle of Parmesan.
