Ingredients

  • Oil - 1 Tbsp
  • Chicken breast, sliced thinly - 450 g
  • Sesame oil - 1 tsp
  • Spring onions, sliced - 2
  • Garlic cloves, sliced - 2
  • Grated ginger - 1 Tbsp
  • Courgette, sliced - 1
  • Red capsicum, sliced thinly - 1/2
  • Toasted sesame seeds - 1 Tbsp

Sauce

  • Runny honey - 1/4 cup
  • Soy sauce - 1/4 cup
  • Water - 2 Tbsp
  • Fish sauce - 1 Tbsp
  • Cooked white rice, to serve - 3 cups

Method

  1. In a large frying pan heat the oil. Cook the chicken in two batches until golden. Set aside.

  2. To the same pan add the sesame oil. Add the spring onion, garlic, ginger, courgette and red pepper tossing for a few minutes until lightly browned.

  3. In a small bowl combine the honey, soy, water and fish sauce.

  4. Add the chicken back to the pan along with the sauce stirring through until hot and bubbling.

  5. Serve on hot steaming rice with a sprinkle of sesame seeds.

Tip: Frozen vegetables are quick and easy to toss into a stir-fry.
