Treat your taste buds with Beef Satay Noodles. This recipe is full of beef, broccolini, carrots, beansprouts, coriander and noodles, and is also super easy to prepare – lunch or dinner will be served in no time!

Ingredients
- Dried thin egg noodles - 250 g
- Peanut oil - 2 Tbsp
- Red chilli, seeds removed (if you prefer) and finely chopped - 1
- Finely grated ginger - 1 Tbsp
- Crunchy peanut butter - 1/2 cup
- Light soy sauce - 2 Tbsp
- Finely grated palm sugar - 1/2 Tbsp
- Water - 3/4 cup
- Fish sauce - 1 Tbsp
- Coconut milk - 1 cup
- Sirloin steak, trimmed of fat - 450 g
- Salt - 1 Tbsp
- Pepper - 1 Tbsp
- Large onion, cut into thin wedges - 1
- Broccolini, cut into bite-size pieces - 1 bunch
- Garlic, minced - 3 cloves
- Carrot, peeled and cut into ribbons with a vegetable peeler - 1
- Bean sprouts - 125 g
- Coriander leaves, to serve - 1 handful
Method
Place vermicelli in a medium heatproof bowl and cover with boiling water. Stand until just tender, drain.
Meanwhile, heat half the oil in wok and in batches, stir-fry beef until browned. Remove from wok.
Heat remaining oil in wok and stir-fry brown onion, garlic and broccolini until onion softens.
Return chicken to wok with vermicelli, combined sauces, sesame seeds and half the chilli, half the green onion and half the sprouts. Stir-fry just until hot.
Serve stir-fry topped with remaining chilli, green onion and sprouts.
