Roasted Soy Chicken with Noodle & Nectarine Salad

Ingredients

  • Soy sauce - ¼ cup
  • Brown sugar - 1 Tbsp
  • Ginger, grated - 1 Tbsp
  • Lemon zest - 1 Tbsp
  • Lemon juice - 2 Tbsp
  • Sesame oil - 1 Tbsp
  • Fish sauce - 1 Tbsp
  • Toasted sesame seeds - 1 Tbsp
  • Chicken breast, cut in half lengthways - 2
  • Rice noodles - 200 g
  • Carrot, grated - 1
  • Cucumber, cut in fine strips - ½
  • Nectarines, quartered - 2
  • Small chilli, chopped - 1
  • Coriander, chopped - ½  cup

Method

  1. Preheat an oven to 180°C.

  2. In a bowl combine the soy, sugar, ginger, zest, juice, oil, fish sauce and sesame seeds. Reserve half for the dressing.

  3. Place the chicken in a small ovenproof dish and pour over the remaining sauce. Bake in the oven for 15 minutes or until cooked through.

  4. While the chicken cooks, soak the rice noodles in boiling water for 10 minutes, then drain and run under cold water to cool.

  5. Add to the noodles the carrot, cucumber, nectarines, chilli, and coriander along with the dressing tossing well to combine.

  6. When the chicken is cooked, slice and serve on top of the salad.
