Briar and Annabelle's Tomato Chorizo Pasta

Ingredients

  • Olive oil - 1 Tbsp
  • Brown onion, chopped - 1
  • Cloves of garlic, finely chopped - 3
  • Chorizo, sliced - 200 g
  • Cherry tomato punnets, quartered - 2
  • Balsamic vinegar - 2 Tbsp
  • Brown sugar - 1 Tbsp
  • Chilli flakes - 1 tsp
  • Paprika - 1 tsp
  • Salt and Pepper to taste
  • Spaghetti pasta, cooked - 500 g
  • Feta - 150 g
  • Fresh basil leaves, to serve

Method

  1. Heat olive oil in a pan at medium heat. Sauté onion for 5 minutes, then add garlic and chorizo. Brown the chorizo until crispy.

  2. Add tomatoes, a splash of balsamic, brown sugar and spices, and let it simmer for 20 minutes. Season to taste

  3. Meanwhile, cook the pasta as per the packet instructions.

  4. To serve, pour the tomato and chorizo mixture over the pasta. Crumble feta overtop and garnish with fresh basil leaves
