
Ingredients
- Waitoa Free-Range Homestyle & Garden Herbs Whole Chicken - 1
- San Remo Pasta Large Spirals, cooked - 2 cups
- Red apples, sliced, tossed in 1 Tbsp lemon juice - 2
- Stick of celery, sliced - 1
- Grapes, halved - 1/2 cup
- Walnuts, toasted - 1/2 cup
- Chopped parsley, plus extra to serve - 1/2 cup
Dressing
- Anchor Protein Plus Yoghurt plain - 1/2 cup
- Lemon zest - 2 tsp
- Lemon juice - 2 Tbsp
- Runny honey - 1 tsp
- Chopped parsley - 2 Tbsp
- Salt, to taste
- Ground pepper, to taste
Method
Preheat an oven to 190°C.
Cook the chicken as per the instructions on the packet. Remove and cool enough to be able to handle. Remove the meat from the bones and chop roughly.
In a large bowl, combine the cooked pasta, apple slices, celery, grapes, walnuts, parsley and chopped chicken.
For the dressing, in a small bowl combine the yoghurt, lemon zest and juice, honey and parsley. Season with salt and pepper. Pour over the salad and toss through.
To serve, top the salad with the dressing and garnish with extra parsley.
