Grant's Fried Brussels Sprouts

Winter is the perfect time to pick this crunchy crop. Poppy and Grant love adding bacon to Brussels sprouts for a mouth watering side dish that could convert even the staunchest sprout sceptic


  • Olive oil - 2 Tbsp
  • Chicken bacon, sliced - 200 g
  • Pacific sweet onion, diced (can use red onion or shallots)
  • Butter - 3 Tbsp
  • Brussel sprouts, stem end removed and quartered - 350g
  • Salt and pepper, to season

Cheese Sauce

  • Butter - 2 Tbsp
  • Flour - 3 Tbsp
  • Milk - 1 1/2 cups
  • Tasty cheese, grated - 50 g
  • Slivered almonds, to serve - 1/4 cup


  1. In a large frying pan add a tablespoon of the olive oil. Add bacon and fry bacon until brown. Then add the onions and cook until they are translucent. Set aside

  2. In the same frying pan add the butter and the remaining olive oil. Add brussels sprouts and cook until starting to golden, approximately 10 minutes.

  3. While the sprouts are cooking, make the cheese sauce. Melt the butter in a saucepan over medium heat . Add the flour and cook, stirring constantly, for 1 to 2 minutes. The mixture will come away from the side of the saucepan.

  4. Remove from the heat and add half of the milk. Whisk to combine. Add the remaining milk and whisk until smooth.

  5. Return to the heat and cook, stirring, for a further 2 to 3 minutes or until the mixture boils and thickens. Remove from the heat and stir in the cheese. Season to taste.

  6. Add the onion and bacon to the brussels sprouts, and cook together until all ingredients are warm. Season with salt and pepper.

  7. Garnish with almonds, and serve
