Ingredients
- Oil, for greasing
- Packet Italian style fennel pork sausages - 1
- White washed potatoes, diced - 300 g
- Orange kumara, peeled and diced - 300 g
- Sprigs of rosemary - 1-2
- Can Italian diced tomatoes - 400 g
- Bunch of broccolini - 1
Method
Preheat oven to 180°c.
Lightly grease a 26 x 20cm 1.5l casserole dish. Add sausages, potatoes, kumara and rosemary. Bake for 30 minutes or until sausages are browned.
Toss through tomatoes and turn over sausages. Season to taste. Return to oven and bake for 15-20 minutes or until sausages are well browned and vegetables are tender.
In a medium saucepan of salted, boiling water, cook broccolini for 2-3 minutes or until just tender.
Serve sausage dish with broccolini on the side.
Tip: This recipe works well with most sausage flavours so try it out with one of your favourites or whatever you have on hand.
