Spice up dinnertime with this delectable recipe for Spiced Kumara with Chive Butter. The roasted kumara with melted spiced butter works as a main or a side for almost any meal.

  • Small orange kumara - 6
  • Butter, mleted - 60 g
  • Cloves garlic, crushed - 2
  • Ground cinnamon - 1/2 tsp
  • Sea salt flakes - 2 tsp

Whipped chive butter

  • Tararua butter - 500 g
  • Pure maple syrup - 1 Tbsp
  • Chopped fresh chives, and extra to serve - 2 Tbsp


  1. Preheat oven to 220°C (200°C fan-forced). Line two large oven trays with baking paper.

  2. Wash the kumara. To make them easier to work with, slice a small piece from one side of the kumara so they sit flat. Slice down the kumara diagonally at 1cm intervals, stopping before you reach the bottom of the kumara so you do not cut all the way through. Place the kumara on the oven trays.

  3. In a small bowl, combine melted butter, garlic, cinnamon and sea salt. Brush the kumara with the butter mixture and roast in the oven for 45 minutes or until brown and tender.

  4. To make the whipped chive butter, beat the butter in a small bowl with an electric mixer until it is light and fluffy. Gently beat in the maple syrup and chives.

  5. Serve the cooked kumara on a platter sprinkled with the chives and served wit the whipped chive butter.

Tip: You can use any colour kumara or even potatoes in this recipe. If you are using potatoes, substitute the cinnamon for paprika. Regular potatoes will discolour when cut, so prepare close to serving.
