
Ingredients
- Olive oil - 1 Tbsp
- Cloves garlic, crushed - 2
- Countdown Cauliflower Rice bag - 1
- Smoked paprika - 1 tsp
- Salt - 1 tsp
- Freshly ground pepper - 1/2 tsp
- Rinsed black beans - 1 cup
- Baby spinach - 2 cups
- Shredded chicken - 1 cup
- Fresh herbs eg parsley, coriander - 1/2 cup
- Sweet chilli sauce - 1/4 cup
- 2 Tbsp lemon juice - 2 Tbsp
Method
Heat the oil in a large frying pan to a medium heat. Add the garlic and cauliflower rice, cooking for 5-8 minutes until is it starting to get a bit of colour. Add the paprika, salt and pepper stirring through for a further 2 minutes. Remove from the heat.
To assemble, in 4 bowls, evenly split the cauliflower rice, black beans, spinach, chicken and herbs.
To make the dressing, in a small bowl, combine the sweet chilli and lemon juice. Drizzle over the salads before serving.
