What’s better than a potato bake? That would be Potato and Bacon Bake! Take a firm family favourite to a new level with this handy recipe.

  • Eggs, beaten - 4
  • Milk - 350 ml
  • Garlic cloves, finely chopped - 6
  • Salt - 1 tsp
  • Strips of bacon, finely diced - 4
  • Chives, chopped - 3 Tbsp
  • Olive oil - 1 Tbsp
  • Washed white potatoes, peeled and sliced thinly - 2 kg
  • Cheese, grated - 1 cup


  1. Preheat the oven to 190°C (170°C fan-forced)

  2. In a large bowl, mix the eggs, milk, garlic, salt, bacon, and chives. Set aside.

  3. Oil a 20cm square ovenproof dish, and layer one third of the potatoes evenly into the dish.

  4. Pour one third of the egg mixture over the potatoes, making sure bacon and chives are evenly distributed. Repeat with the remaining two-thirds of the potatoes and egg mixture.

  5. Sprinkle the cheese evenly on top. Cover loosely with foil and place in the oven for 45 minutes.

  6. Uncover and bake a further 15 minutes until the potatoes are tender and everything is bubbling and golden.
