Mike's Spiced Plum Crostata

Ingredients

  • Flour - 1 1/2 cups
  • Caster sugar - 3 Tbsp
  • Salt - a pinch
  • Unsalted butter, cut into small pieces - 150 g
  • Pure vanilla paste or essence - 1/2 tsp
  • Almond extract - 1 tsp
  • Water - 1/4 cup

Filling

  • Dried cranberries - 1 cup
  • Apple juice - 3 Tbsp
  • Plums (fresh or canned) - 12
  • Brown sugar - 4 Tbsp
  • Cinnamon powder - 1 tsp
  • Icing sugar - 1 Tbsp

Method

  1. Place the flour, sugar and salt into a bowl and mix until well combined; slowly add in the butter and rub the mixture with your fingers until the butter becomes pea-like in size.

  2. Slowly add the water, vanilla and almond extract until the dough moistens and comes together. Set aside.

  3. For the spiced plum mix, soak the cranberries in apple juice and a touch of warm water for 10 minutes.

  4. Halve the plums and remove the stone. Mix with brown sugar and cinnamon. Drain the cranberries well and then toss into the plums.

  5. Preheat the oven to 180°C.

  6. Roll out the crostata dough to the size of a small plate or tray, approx 5mm thick. Lay onto a greaseproof paper lined tray.

  7. Drain the plum mixture well, and then spoon into the centre on the dough, leaving a 5cm border. Fold up the sides of the dough and brush the outside with water. Sprinkle the top with icing sugar.

  8. Place into the oven and cook for 35 minutes, or until golden. Remove and allow to cool.

  9. Serve with ice-cream or cream.
