  • Self-rising flour - 2 cups
  • Caster sugar - 1 cup
  • Cinnamon - 1/2 Tbsp
  • Fresh ginger, grated - 1 Tbsp
  • Water - 1/2 cup
  • Butter, melted - 180 g
  • Eggs - 3
  • Apples, peeled and sliced - 2
  • Feijoa pieces - 1 cup


  • Butter, melted - 50 g
  • Brown sugar - 1/2 cup
  • Cinnamon - 1/4 Tbsp
  • Yoghurt, to serve


  1. Preheat an oven to 170°C. Line a 23cm tin with baking paper.

  2. Into a large bowl combine the flour, sugar, cinnamon and ginger.

  3. Whisk together the water, butter and eggs. Pour into the flour mix and stir gently until smooth.

  4. Fold through half the fruit and then pour into the tin. Arrange the remaining fruit on the top.

  5. For the topping, in a small bowl combine the butter, sugar and cinnamon. Spread carefully over the fruit. Place into the oven for 1 hour. Check after 45 minutes and if browning place a piece of tinfoil loosely over the top.

  6. Remove from the oven and cool in the tin. Serve with a dollop of Greek yoghurt.
