Orange Cornflake Cookies

Ingredients

  • Carrot, grated - 1
  • Dried apricots, chopped - 80 g
  • Orange zest - 1/2
  • Self-raising flour - 1/4 cup
  • Rolled oats - 1/4 cup
  • Margarine, melted - 1/4 cup
  • Yoghurt - 2 Tbsp
  • Pure honey - 2 tsp
  • Pinch of nutmeg
  • Cornflakes, roughly crushed - 2 cups

Method

  1. Preheat oven to 180°c. Line two trays with baking paper.

  2. Combine carrot, apricots, orange zest, flour, oats, margarine, yoghurt, honey and nutmeg in a large bowl. Add crushed cornflakes and stir to combine.

  3. Shape into rough balls, place on tray and bake for 15 minutes or until golden. Cool on trays.
