Chia Seed Jams

Ingredients

  • Sugar - 2 Tbsp
  • Water - 2 Tbsp
  • White chia seeds - 2 Tbsp

Feijoa Jam:

  • Feijoa pulp - 2 cups

Blueberry Jam:

  • Frozen blueberries - 2 cups
  • Replace whites chia seeds with black chia seeds - 2 Tbsp

Strawberry Jam:

  • Frozen strawberries - 2 cups
  • Zest of 1 lime

Chilli and Ginger Jam:

  • Red long chillies, chopped and seeds removed - 6
  • Water - 1/2 cup
  • Fresh ginger, grated - 2 tsp
  • Sugar - 1/8 cup
  • Fish sauce - 1 Tbsp

Method

  1. Place the fruit, sugar and water into a medium sized pot. Slowly bring to a simmer for 10 minutes allowing the sugar to dissolve and feijoa completely soften.

  2. Stir through the chia seeds cooking for a further 5-8 minutes until the mixture has thickened. Remove from the heat and spoon into a sterilized jar.
