Ingredients
- Dates - 1/2 cup
- Butter, softened - 125 g
- Brown sugar - 1/2 cup
- Eggs - 2
- Vanilla essence - 1 tsp
- Plain flour - 2 cups
- Baking powder - 1 tsp
- Baking soda - 1 tsp
- Mashed banana (plus 1 whole banana for the top) - 1 cup
- Chopped walnuts - 1/2 cup
Method
Preheat an oven to 180°C. Line a loaf tin with paper.
Soak the dates in boiling water for 10 minutes, drain well and then chop roughly.
Cream the butter and sugar until light and creamy. Beat in the eggs and vanilla.
Stir through the flour, baking powder and soda. Gently fold through the mashed banana, dates and walnuts without overmixing. Pour into the loaf tin and smooth the top.
Cut the remaining banana in half lengthways and place on the top. Bake for 45 minutes or until a skewer comes out clean. Cool in the tin.
