This recipe for Easter Brunch Burgers combines all of your favourite brunch goodies in fluffy brioche buns to create a deliciously satisfying brunch or breakfast, perfect for Easter long weekend.

  • Rashers of bacon - 8
  • Oil - 1 tsp
  • Eggs - 4
  • Brioche burger buns - 4
  • Tomato relish - 4 tsp
  • Mayonnaise - 2 tsp
  • Cheddar cheese slices - 4
  • Avocado, sliced - 1
  • Rocket - 1 cup
  • Salt and pepper, to season


  1. Preheat the grill oven to 220°C (200°C fan-forced)

  2. Place the bacon on a lined baking tray and cook on both sides until cooked to your liking. Remove from the tray, cut each rasher in half and set aside.

  3. In a non-stick frying pan, add the oil and then the eggs. Season with salt while cooking and cook for at least 90 seconds or until eggs are cooked to your liking. 90 seconds will be a runny yolk!

  4. Halve the brioche buns and warm buns under the grill in the oven. When ready to assemble, spread the bottom bun with relish and the top with mayo.

  5. Top with 1 slice of cheese, quarter of the avocado (season with salt and pepper), four pieces of bacon, 1 egg, quarter of the rocket and place the lid of the buns and serve.
