Ingredients

  • Ginger kombucha - 1/2 cups
  • Lemon juice - 1 Tbsp
  • Ground cinnamon - 1/3 tsp
  • Sea salt - 1/4 tsp
  • Red apples, unpeeled, cored, cut into wedges - 2
  • Greek - style yoghurt - 500 g
  • Eggs - 2
  • Butter, melted - 40 g
  • Honey - 1/3 cup
  • Vanilla extract - 1 tsp
  • Plain flour - 2 1/4 cups
  • Baking soda - 1/4 tsp
  • Baking powder - 1 tsp
  • Sour cream - 250 g
  • Pistachios - 1/4 cups

Method

  1. Prepare the cinnamon apples by combining the ingredients in a large bowl and setting aside to stand while preparing the pancakes.

2.Preheat oven to 150°C (130°C fan-forced).

  1. In a medium bowl, whisk together the yoghurt, eggs, butter, 1 Tbsp of the honey and the vanilla. In a separate large bowl, whisk together the flour, baking soda and baking powder. Add the yoghurt mixture to the flour mixture and fold until just combined.

  2. Lightly grease a large non-stick frying pan and place over a medium heat. Once hot, cook the batter in ¼ cup batches for 2 minutes on each side or until golden and cooked through. Transfer to an oven tray to keep them warm in the oven while cooking the remaining pancakes.

  3. Serve pancakes with the cinnamon apples, a dollop of sour cream, remaining honey drizzled over the top and scattered with the chopped pistachios.

Tip:If you wish, you can ferment the apples by standing them at room temperature for at least 4 hours or up to 24 hours.
