Garlic Vegetable Pizza

  • 160g Gluten Free PIzza Dough
  • 50ml water
  • 2 Tbsp vegetable oil
  • 1 egg
  • 4 garlic cloves
  • 1 cup mozzarella Cheese, grated
  • 1/2 cup onion slices
  • 1/2 cup cherry tomatoes
  • 1/2 cup chargrilled capsicum
  • salt and freshly ground black pepper
  • handful of fresh basil leaves

  • Preheat the oven to 180°C.

  • Spray a whole bulb of garlic with oil and cook in a preheated oven for 20-30 minutes until golden. Cool slightly before peeling back the garlic skin from the cloves. Mash 4 cloves with a little oil in a bowl or pestle. Set aside.

  • Place the pizza dough in a bowl with the water, oil and egg. Mix together with a wooden spoon until the ingredients are well blended. Knead for a few minutes using your hands. Oil a pizza pan. Place the dough in the centre of the pan and use your hands to form it into a round.

  • Smear the base with the roasted garlic purée and top with the mozzarella, tomatoes, onion slices and capsicum. Bake in the oven for 10-15 minutes.

  • Serve seasoned with salt and freshly ground pepper and garnished with fresh basil leaves.
