Crispy squid with wasabi mayo
- 2 egg whites, beaten
- 1 tsp chilli flakes
- 2 Tbsp fresh coriander, sliced
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1 Tbsp olive oil
- 1/2 cup rice flour
- 250g fresh squid or frozen squid thawed, cut into strips
- Oil for deep frying - not olive oil
- 1/2 cup mayonnaise
- 1 tsp wasabi
Beat the egg whites in a small bowl. Add the chilli, coriander, salt, pepper, oil, 1 Tbsp of the rice flour and combine.
Now add the squid strips and mix together to ensure every piece is covered.
Remove a piece at a time and roll into the remaining rice flour. Deep fry until golden. Delicious!
Combine the mayonnaise and wasabi in a small bowl and set aside.
