Crispy squid with wasabi mayo


  • 2 egg whites, beaten
  • 1 tsp chilli flakes
  • 2 Tbsp fresh coriander, sliced
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 Tbsp olive oil
  • 1/2 cup rice flour
  • 250g fresh squid or frozen squid thawed, cut into strips
  • Oil for deep frying - not olive oil
  • 1/2 cup mayonnaise
  • 1 tsp wasabi

  • Squid:

  • Beat the egg whites in a small bowl. Add the chilli, coriander, salt, pepper, oil, 1 Tbsp of the rice flour and combine.

  • Now add the squid strips and mix together to ensure every piece is covered.

  • Remove a piece at a time and roll into the remaining rice flour. Deep fry until golden. Delicious!

  • Mayonnaise:

  • Combine the mayonnaise and wasabi in a small bowl and set aside.
