Lychee, Mint & Champagne Cocktail
- 560g canned lychees
- 750ml sparkling wine
- 2 passion fruits, halved and pulp removed
- ¼ cup mint leaves
1. Drain a can of lychees, reserving ¼ cup syrup.
2. In a large jug combine sparkling wine, lychees, reserved syrup, passionfruit pulp and mint leaves. Stir to combine.
3. Serve straight away.
