Lychee, Mint & Champagne Cocktail

Ingredients

  • 560g canned lychees
  • 750ml sparkling wine
  • 2 passion fruits, halved and pulp removed
  • ¼ cup mint leaves

Method

  • 1. Drain a can of lychees, reserving ¼ cup syrup.

  • 2. In a large jug combine sparkling wine, lychees, reserved syrup, passionfruit pulp and mint leaves. Stir to combine.

  • 3. Serve straight away.
