Mike's Chicken Sliders

Ingredients

  • 200g chicken mince
  • 1 courgette, grated
  • 1 Tbsp soy sauce
  • 2 Tbsp coriander, chopped
  • 1 Tbsp oil
  • 6 slider buns
  • Pickled Slaw
  • 1⁄4 cup white wine vinegar
  • 1⁄4 cup water
  • 2 Tbsp honey
  • Pinch salt
  • 2 cups red cabbage, shredded
  • 1 red apple, grated
  • 2 Tbsp mayonnaise

Method

  • 1. In a large bowl combine chicken mince, courgette, soy sauce, and coriander and mix well. Form into golf ball sized balls and flatten into patties. Refrigerate for 10 minutes.

  • 2. In a frying pan heat oil, and pan fry patties for roughly 4 minutes each side.

  • 3. To make the slaw, combine vinegar, water, honey and salt together in a small saucepan and bring to the boil. Remove from heat and add the cabbage. Allow to cool.

  • 4. Once cool, drain the cabbage and add the apple and mayonnaise. Mix to combine.

  • 5. To serve, slice the slider buns in half and lightly toast the cut surfaces under the grill. Then

  • stack a patty and some slaw in each slider bun.
