Raw Wheat Biscuit and Lemon Slice

Ingredients

  • 1 cup dried dates
  • 5 wheat biscuits
  • 1 cup desiccated coconut
  • ½ cup pumpkin seeds
  • ¼ cup coconut oil
  • ¼ cup honey
  • 1 tsp cinnamon
  • 2 tsp lemon zest
  • Topping
  • 1 cup icing sugar
  • 2 Tbsp lemon juice

Method

  • 1. Line a 20 x 30cm baking tin with baking paper.

  • 2. Soak the dates in boiling water for 10 minutes. Drain and reserve a ¼ cup liquid.

  • 3. Into a kitchen processor, place the drained dates, reserved liquid, wheat biscuits, coconut, pumpkin seeds, oil, honey, cinnamon and lemon zest. Blitz until well combined.

  • 4. Combine the icing sugar and lemon juice spreading evenly over the top. Place into the fridge for 2 hours to set, then cut into pieces to serve.
