Baked Chicken Wings with Peachy BBQ Sauce

Ingredients
- 3 ripe peaches, peeled, coarsely chopped
- 1/4 cup BBQ sauce*
- 1 Tbsp apple cider vinegar
- 3 Tbsp peach or apricot jam
- Pinch of cayenne pepper
- 1kg chicken wings
- Salt and pepper, to season
- Chopped Italian parsley, to serve
Method

1. In a blender or food processor, place chopped peaches, BBQ sauce, vinegar, jam and cayenne pepper. Process until smooth. Reserve half a cup of sauce for serving.

2. Place chicken wings in a large bowl and season with salt and pepper. Add remaining peach sauce mixture and mix well to coat. Marinate for at least 30 minutes.

3. Preheat oven to 210°C (190°C fan-forced). Arrange chicken wings on a roasting tray in a single layer and bake, turning once or twice, for 25 minutes, or until cooked and golden brown.

4. Serve with the reserved peach sauce and sprinkle with chopped parsley.

Helpful Tip:

You could used tinned peaches instead of fresh, just be sure to drain well first.

To peel peaches, cut a cross in the stalk end. Plunge into a pot of boiling water for 1 minute, then plunge into iced water. The skins should slip off.
