Baked Chicken Wings with Peachy BBQ Sauce

  • 3 ripe peaches, peeled, coarsely chopped
  • 1/4 cup BBQ sauce*
  • 1 Tbsp apple cider vinegar
  • 3 Tbsp peach or apricot jam
  • Pinch of cayenne pepper
  • 1kg chicken wings
  • Salt and pepper, to season
  • Chopped Italian parsley, to serve

  • 1. In a blender or food processor, place chopped peaches, BBQ sauce, vinegar, jam and cayenne pepper. Process until smooth. Reserve half a cup of sauce for serving.

  • 2. Place chicken wings in a large bowl and season with salt and pepper. Add remaining peach sauce mixture and mix well to coat. Marinate for at least 30 minutes.

  • 3. Preheat oven to 210°C (190°C fan-forced). Arrange chicken wings on a roasting tray in a single layer and bake, turning once or twice, for 25 minutes, or until cooked and golden brown.

  • 4. Serve with the reserved peach sauce and sprinkle with chopped parsley.

  • Helpful Tip:

  • You could used tinned peaches instead of fresh, just be sure to drain well first.

  • To peel peaches, cut a cross in the stalk end. Plunge into a pot of boiling water for 1 minute, then plunge into iced water. The skins should slip off.
