Cauliflower and Cheese Frittatas

  • 220g cauliflower florets
  • 8 eggs, lightly beaten
  • 3/4 cup grated tasty cheese
  • 3/4 cup frozen peas
  • 1 Tbsp chopped Italian parsley

  • 1. Preheat oven to 180°C (160°C fan-forced). Grease a 12-hole muffin pan.

  • 2. Place cauliflower in a microwave safe dish with just enough water to cover the bottom of the dish. Cover with a paper towel and microwave on high for 4 minutes. Allow to cool and roughly chop into pieces.

  • 3. In a medium bowl combine cauliflower with remaining ingredients. Spoon mixture evenly into prepared pan.

  • 4. Bake for 15 minutes, or until firm.

  • 5. Transfer to a wire rack to cool.

  • Fresh Tip: You could use broccoli instead of cauliflower, or half and half.
