Watermelon, Mint and Lime Cooler

Ingredients
- 4 cups diced watermelon, plus extra wedges, to serve
- 1 1/3 cups ginger ale
- 2 limes (1 juiced, 1 sliced)
- Crushed ice
- 2 mint sprigs, plus extra, to serve
Method

1. Freeze the watermelon in a freezer bag for six hours or overnight.

2. Purée the frozen watermelon in a food processor. Add the ginger ale, lime juice, ice and a couple of sprigs of mint and stir.

3. Divide the mixture between the glasses. Decorate with slices of lime, a wedge of watermelon and mint sprigs.
