Double Chocolate Cookies

20 minutes + 15 minutes Serves 12

Ingredients

  • 125 g Butter, softened and cubed
  • 1/2 tsp Vanilla extract
  • 1 cup Brown sugar
  • 1 large Egg
  • 2 cups Flour
  • 1 tsp Baking powder
  • Pinch of salt
  • 200 g Dark or milk chocolate

Method

  • 1. Preheat your oven to 180C and line a baking tray with baking paper.

  • 2. Beat the butter, vanilla and sugar until very pale and fluffy. Beat in the egg then sieve the flour, baking powder and salt together and fold into the butter.

  • 3. Gently mix through the chocolate. Roll into balls, place on the tray and gently press them down.

  • 4. Bake until golden, approximately 13 to 15 minutes.
