Mini Pear Crumbles

  • 4 firm pears, peeled, cored, chopped
  • 1 Tbsp ground ginger
  • 1 tsp ground cinnamon
  • 1⁄3 cup caster sugar
  • 1 Tbsp lemon juice
  • 1⁄3 cup water
  • 10 gingernut biscuits
  • 1⁄3 cup shredded coconut
  • 2 Tbsp plain flour
  • 40g unsalted butter, chopped
  • Whipped cream, to serve

  • 1. Preheat oven to 180°C (160°C fan-forced). Place pear, ginger, cinnamon, sugar, lemon juice and water in a medium saucepan over a low heat. Cook, stirring occasionally, for 12 minutes or until pear is soft. Remove from heat.

  • 2. Pulse biscuits in a food processor until coarsely chopped. Transfer to a bowl; stir in coconut and flour. Rub butter into biscuit mixture until large crumbs form. Divide pear mixture among 4 x 1 cup capacity ovenproof ramekins. Top with crumble mixture.

  • 3. Bake for 15 minutes, or until golden. Serve with whipped cream.
