Courgette and Feta Fritters

Ingredients
- 3 courgettes, grated
- 2 garlic cloves, crushed
- 3 eggs
- 1/2 cup Parmesan cheese, grated
- 100 g feta, crumbled
- 1/4 cup parsley, chopped
- 1/4 cup mint, chopped
- 1/2 cup Macro self-raising flour or Free From Gluten Flour
- 1/2 tsp salt and pepper
- 1 Tbsp oil for cooking
- garlic aioli, to serve
Method

1. Place the courgettes into a tea towel to squeeze out any liquid.

2. In a bowl combine the garlic, eggs, courgettes, parmesan, feta, parsley, mint, flour, salt and pepper.

3. Heat the oil in a frying pan to a medium hear. Place large tablespoons of the mixture into the pan. Cook for 3 or 4 minutes then flip and cook for another 3 minutes on the other side.

4. Serve with garlic aioli.
