Barbecued Prawns with Avocado Salsa

Ingredients
- 800g prawns, tails on, deveined
- 3 Tbsp olive oil
- 2 cloves garlic, finely chopped
- 1 Tbsp lime juice
- 1 tsp ground coriander
- 1 tsp ground cumin
- 1 tsp chilli flakes
- Lemon wedges, to serve
- Avocado salsa
- 1 large tomato, chopped
- 1 avocado, peeled and roughly chopped
- 1/2 red onion, finely chopped
- 1 Tbsp lime juice
- Salt
- Pepper
Method

1. Place the prawns, oil, garlic, lime juice, coriander, cumin and chilli flakes in a large bowl and mix. Refrigerate for 1 hour.

2. Meanwhile, to make the salsa, combine the tomato, avocado, onion and lime juice in a small bowl. Season generously with salt and pepper.

3. Heat a BBQ hot plate to high. Lift the prawns from the marinade and cook for 3-4 minutes, turning until the prawns are pink. Season with salt while cooking.

4. Serve the prawns hot with the salsa and lemon wedges on the side.
