Barbecued Prawns with Avocado Salsa

15 minutes + 4 minutes Serves 4

Ingredients

  • 800g prawns, tails on, deveined
  • 3 Tbsp olive oil
  • 2 cloves garlic, finely chopped
  • 1 Tbsp lime juice
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 1 tsp chilli flakes
  • Lemon wedges, to serve
  • Avocado salsa
  • 1 large tomato, chopped
  • 1 avocado, peeled and roughly chopped
  • 1/2 red onion, finely chopped
  • 1 Tbsp lime juice
  • Salt
  • Pepper

Method

  • 1. Place the prawns, oil, garlic, lime juice, coriander, cumin and chilli flakes in a large bowl and mix. Refrigerate for 1 hour.

  • 2. Meanwhile, to make the salsa, combine the tomato, avocado, onion and lime juice in a small bowl. Season generously with salt and pepper.

  • 3. Heat a BBQ hot plate to high. Lift the prawns from the marinade and cook for 3-4 minutes, turning until the prawns are pink. Season with salt while cooking.

  • 4. Serve the prawns hot with the salsa and lemon wedges on the side.
