Coffee, Banana and Almond Milk Chia Pot Dessert

  • 2 cup Almond Breeze almond milk
  • 1 cup Macro chia seeds
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon, plus extra for sprinkling
  • 2 cups black coffee
  • 2 Tbsp Homebrand cocoa powder
  • 4 tsp Ceres Organics maple syrup
  • 2 small ripe bananas, mashed
  • 8 Tbsp reduced-fat natural yoghurt
  • 4 Tasti pitted prunes, chopped
  • 4 Tbsp Tasti whole almonds, chopped
  • 2 oranges, cut into segments, pith removed

  • 1. Place almond milk, chia seeds, vanilla, cinnamon, coffee, cocoa, maple syrup and banana in a bowl and stir well to combine. Put bowl in fridge and leave overnight.

  • 2. When ready to serve, divide chia mixture between eight small glasses. Top with yoghurt and sprinkle with chopped prunes, almonds and orange segments.
