Prawn Lettuce Cups
- 500 g cooked whole prawn cutlets, thawed
- 1 medium avocado, coarsely chopped
- 1/4 cup coarsely chopped fresh coriander
- 1 Tbsp sweet chilli sauce
- 1 Tbsp lime juice
- 12 small cos lettuce leaves
1. Chop prawn meat coarsely.
2. Combine prawns, avocado, coriander, sweet chilli sauce and lime juice in a bowl. Season to taste.
3. Divide prawn mixture into lettuce leaves. Serve with extra sweet chilli sauce, if desired.
