Peas and Mint Butter
- 2 1/4 cups frozen peas
- 40 g softened butter
- 1 Tbsp finely chopped fresh mint
- 1 tsp finely grated lemon rind
How to Chop Herbs
1. Boil, steam or microwave peas until just tender and drain.
2. Meanwhile, combine butter, mint and lemon rind in a small bowl.
3. Serve peas topped with mint butter mixture.
