Cream and Berry Croissant

Ingredients

  • 4 large croissants
  • 2 cups lightly whipped cream
  • 1/4 cup icing sugar, plus more for dusting
  • 1/3 cup fresh raspberries
  • 1/3 cup fresh strawberries
  • 1/3 cup fresh blueberries

Method

1. Slice the croissants one-third of the way through horizontally.

2. In a bowl combine the cream and sugar. Just before serving gently fold through the berries.

3. Spoon the cream into the croissants and dust with icing sugar.
