Crispy Potatoes

  • 1 kg Agria potatoes, cut into 3cm chunks
  • 2 Tbsp oil
  • 1 tsp Tuscan herbs
  • salt to taste
  • 1/2 cup grated Parmesan

  • 1. Preheat oven to 200°C (180°C fan forced).

  • 2. Spread the potato on a large baking tray lined with baking paper. Sprinkle with herbs, oil and salt, tossing well to combine. Roast for 20 minutes.

  • 3. Remove from the oven and sprinkle over the parmesan, toss and continue to cook for a further 20 minutes until crisp and golden.
