- 1 kg agria potatoes, cut into 3cm chunks
- 2 Tbsp oil
- 1 tsp Tuscan herbs
- Salt to taste
- 1/2 cup grated parmesan
1. Preheat oven to 200°C (180°C fan forced).
2. Spread the potato on a large baking tray lined with baking paper. Sprinkle with herbs, oil and salt, tossing well to combine. Roast for 20 minutes.
3. Remove from the oven and sprinkle over the parmesan, toss and continue to cook for a further 20 minutes until crisp and golden.
