Two Ways with Prawns

20 minutes + 6 minutes Serves 20

Ingredients

  • 500 g large raw prawns
  • 2 cloves garlic, peeled and crushed
  • Zest and juice of 1 lemon
  • 2 Tbsp sweet chilli sauce
  • 1 tsp fish sauce
  • 1 Tbsp olive oil
  • Freshly ground pepper
  • Salt to taste

How to De-vein Prawns

Method

  • BASE RECIPE:

  • In a large bowl combine all of the ingredients above, and allow to marinate for at least 20 minutes.

  • PRAWN AND PINEAPPLE SKEWERS

  • Ingredients:

  • 1 portion of ‘base recipe’

  • 1/2 fresh pineapple cut into cubes

  • 1 green capsicum, seeds removed and cut into chunks

  • 1/4 cup chopped coriander

  • 1 lemon cut in wedges, to serve

  • Method

  • 1. Thread a piece of pineapple, a prawn, piece of capsicum and another piece of pineapple on to a skewer.

  • 2. Heat BBQ or grill plate to a medium heat. Cook the skewers for 3 to 4 minutes each side until cooked through.

  • 3. Serve with a sprinkle of coriander and squeeze of lemon.

  • TIP: If using bamboo skewers, soak them in cold water for 15 minutes first to stop them from burning on the grill.

  • PRAWNS WITH MANGO AND STRAWBERRY SALSA

  • Ingredients:

  • 1 portion of ‘base recipe’

  • Salsa:

  • 1/2 cup each chopped mango, cucumber, strawberries, mint

  • 2 Tbsp lemon or lime juice

  • Method

  • 1. To make the salsa in a small bowl combine the mango, cucumber, strawberries, mint and lemon / lime juice.

  • 2. Heat a BBQ or frying pan hotplate to a medium heat. Cook the prawns for 3 minutes each side or until cooked through. Serve warm with the salsa.
