- 3 bunches asparagus, ends trimmed
- Zest and juice of 1 lemon
- Salt and freshly ground pepper
- Olive oil to drizzle
How to Use up Your Fruit and Vegetables
1. Bring a large pot of salted water to the boil. Place the asparagus in the water and boil for 5 minutes until cooked but still a little crisp.
2. Drain and arrange on a platter. Sprinkle with the lemon zest and juice, salt, pepper and drizzle with a little olive oil. Serve immediately.
Tip: Try with toasted almonds sprinkled on top
