Mulled Wine Spritzer

  • 1 cup caster sugar
  • 1 cup water
  • 1 cinnamon stick
  • Zest of 1 lime
  • 250ml dry red wine
  • 250ml dry white wine
  • 150ml freshly squeezed orange juice
  • 150ml pineapple juice
  • Orange and lemon slices, to serve
  • Ice
  • Soda Water

  • 1. To make sugar syrup, place caster sugar, water, cinnamon stick and the lime zest in a saucepan. Place over high heat and bring to the boil, stirring constantly. Reduce heat to low and simmer for 10 minutes. Let cool and strain.

  • 2. Place syrup, wine, juice and citrus slices in a large jug, give it a good stir. Fill the jug with ice, then top with soda water, stir again and serve immediately in chilled glasses.
