Sesame Chicken Fingers with Tasty Slaw

  • 300 g chicken tenders
  • 500 g packet Vital Vegetables Vital Immunity Slaw
  • Marinade
  • 1/2 cup buttermilk
  • 1 teaspoon soy sauce
  • 1 tablespoon honey
  • Coating
  • 1/4 cup sesame seeds
  • 1/2 teaspoon salt
  • 1 tablespoon olive oil
  • 1 1/4 cups panko breadcrumbs

  • Mix the marinade ingredients in a bowl. Add the chicken tenders and stir to coat. Cover and chill for 30 minutes to 1 hour.

  • Meanwhile, for the coating, heat a frypan over medium-high heat. Add the panko breadcrumbs to the dry hot pan and spread them out evenly. Lower the heat to medium and stir until the breadcrumbs begin to brown. Add the sesame seeds and continue to cook, stirring frequently, until the mixture is a deep golden colour. Remove from the heat. Add the olive oil and salt and stir to coat everything with the oil. Place in a shallow bowl.

  • Preheat the oven to 200°C. Line a roasting pan with tinfoil and place an oiled baking rack on top. Remove the chicken tenders one at a time from the marinade (do not wipe off the marinade) and dredge them in the breadcrumb mixture. Place them on the prepared rack.

  • Bake the chicken in the preheated oven for 15 minutes. Set the chicken tenders aside to cool for 5 minutes before serving with the Vital Vegetables Vital Immunity Slaw.
