Hoki Cannelloni Bake
- 1 Tbsp olive oil
- 1 onion
- 400g can diced tomatoes
- 1 Tbsp tomato paste
- 500g cottage cheese
- 2 tsp lemon pepper
- 400-500g hoki
- 200g cannelloni
- 1/2 cup cheese
How to Tell When Fish is Cooked
Preheat oven to 180°C. Lightly grease a large oven proof baking dish.
Heat oil in a large frying pan. Cook onion until soft and translucent. Add tomatoes, water, and paste. Simmer for 8-10 minutes, until the sauce has thickened and is almost jam-like in consistency.
Place half the cottage cheese in a bowl, sprinkle in the lemon pepper and add the fish. Season with salt and mix well.
Spoon 1/3 of the tomato sauce into the base of dish. using a teaspoon, fill the cannelloni tubes with the fish and cheese mixture. Then, place onto the sauce in the dish. Repeat until all fish mixture is finished and the tubes are all filled.
Pour the remaining tomato sauce over the filled cannelloni tubes. Spread the remaining cottage cheese over the tomato sauce then sprinkle over the cheese. Cover with foil and bake for 30 minutes. Remove the foil and bake for a further 15 minutes, until golden brown.
