Pear Crumble

  • 5 Taylor's Gold Pears
  • 1/4 cup sugar
  • 1/2 cup brown sugar
  • 1 cup flour
  • 1 tsp baking powder
  • 70 g butter
  • 1/2 cup shredded coconut
  • 1/2 cup rolled oats

  • To stew pears, peel and cut into thick slices. Place in a pot and add ¼ cup of sugar, cup of water, cover and cook gently for 15 minutes.

  • Place stewed pears in the bottom of a dish and sprinkle with 2-3 Tbls brown sugar.

  • Sieve flour and baking powder into a bowl, then slice in the butter in small pieces at a time. Rub the butter into the dry ingredients with fingers until it resembles breadcrumbs. Add coconut and rolled oats. Mix well then sprinkle mixture over fruit and bake for around 30 minutes at 180-190ºC or until golden.
