Brazilian Pork Chops in Orange Sauce
- 4 NZ pork chops (loin or shoulder)
- 1 tsp cumin seeds
- 1 tsp grated ginger
- 1 tsp dried oregano
- 1 tsp minced garlic
- 1/2 tsp turmeric
- 1/2 tsp paprika
- 1/2 tsp mustard powder
- 1/2 tsp ground coriander
- 1/2 tsp salt
- 1/2 tsp pepper
- 2 tbsp canola oil
- 1 medium onion, peeled and diced
- 1/2 cup orange juice
- 1/4 cup raisins or sultanas
- 2 oranges, cut into 1 cm slices and skin zested
How to Zest, Peel and Segment Citrus
Mix together all the herbs and spices. Sprinkle over chops in a plastic bag or bowl.
Heat oil in a heavy based fry pan and quickly brown both sides of chops. Place in lidded saucepan or casserole dish.
Brown onions, stir in orange juice and 1 cup water, then pour over the chops and add raisins.
Simmer in lidded pot or pre-heated oven (165°C) for 1 hour.
Place zest and orange segments above chops and cook a further 15 minutes. Serve with mashed potatoes.
