Kumara and Lemon Bake

  • 3 kumara
  • 2 tbsp butter
  • 2 tbsp brown sugar
  • Rind and juice of 1 lemon

How to Microwave a Kumara


Preheat oven to 180°C. Peel and cut kumara into wedges.

Boil in salted water until almost cooked. Drain and place kumara in a shallow dish.

Spread butter over the kumara and cover generously with brown sugar and lemon juice. Bake uncovered for about 20 minutes until crisp and brown.

Sprinkle with grated lemon rind and bake a further 5 minutes or until kumara is cooked and golden.
