Kumara and Lemon Bake

  • 3 kumara
  • 2 tbsp butter
  • 2 tbsp brown sugar
  • Rind and juice of 1 lemon

  • Preheat oven to 180°C. Peel and cut kumara into wedges.

  • Boil in salted water until almost cooked. Drain and place kumara in a shallow dish.

  • Spread butter over the kumara and cover generously with brown sugar and lemon juice. Bake uncovered for about 20 minutes until crisp and brown.

  • Sprinkle with grated lemon rind and bake a further 5 minutes or until kumara is cooked and golden.
