Serves 1 large

Ingredients

  • 2 tsp dried yeast
  • 1 tsp sugar
  • 2 cups plain flour (or substitute with 2 cups Macro Gluten Free plain flour)
  • 1 tsp salt
  • 1 Tbsp olive oil

Method

1. To make the dough: put ¾ cup tepid water in a small bowl. Sprinkle over the yeast and sugar and set aside in a warm place for a few minutes, or until the yeast begins to froth.

2. Place the flour and salt in a large bowl and make a well in the middle. Pour in the yeast mixture and oil. Stir until well combined with a wooden spoon and the mixture forms a soft dough.

3. Tip onto a floured surface and knead for 8-10 minutes until it is smooth and elastic.

4. Place the dough in a lightly oiled bowl. Cover and put in a warm place and wait for it to double in size (approximately 1 hour).

5. Preheat oven to 200°C.

6. Place the dough onto a floured surface again and knock back or knead for another 2 or 3 minutes. Roll the dough into a 30cm circle, about 1cm thick.

Topping 1

1 cup pasta sauce

1 cup mozzarella, grated

1/2 cup roasted garlic

1 courgette, sliced thinly

8 cherry tomatoes, cut in half

1. Spread the tomato paste or sauce evenly over the pizza base.

2. Add a little cheese and then sprinkle the rest of the ingredients on.

3. Finish with remaining mozzarella, salt and pepper.

4. Place the pizza on a baking tray, and place in the preheated oven for 15-20 minutes, or until the base is crisp and golden.

5. Garnish with some fresh basil leaves to serve (optional).

Topping 2

2 Tbsp tomato paste

6 button mushrooms, sliced

1/2 cup sundried tomatoes, sliced

4 slices prosciutto, cut into thirds

1/2 cup black olives

1 cup mozzarella, grated

salt and pepper to taste

fresh basil leaves to garnish (optional)

1. Spread the tomato paste or sauce evenly over the pizza base.

2. Add a little cheese and then sprinkle the rest of the ingredients on.

3. Finish with mozzarella, salt and pepper.

4. Place the pizza on a baking tray, and place in the preheated oven for 15-20 minutes, or until the base is crisp and golden.

5. Garnish with some fresh basil leaves to serve (optional).

Topping 3

1 cup tomato paste

1 large tomato, sliced

Handful fresh basil leaves

3 cooked pork sausages, cold and sliced

50g shaved champagne ham, thinly sliced

1 cup mozzarella, grated

2 Tbsp BBQ Sauce

1. Spread the tomato paste or sauce evenly over the pizza base.

2. Add a little cheese. Top with tomatoes. Tear the basil leaves and sprinkle around the tomatoes. Arrange the sliced sausages and ham over the tomatoes then sprinkle generously with mozzarella.

3. Drizzle with BBQ sauce and grill for 15 minutes, or until cooked and cheese is bubbling and melted.
