Spicy Tomato

Heat a non-stick fry pan, add the butter and when melted add the spring onions. Cook gently until soft 2 -3 minutes. Add the cumin and cook until fragrant around 30 seconds, then add the tomatoes and Tabasco sauce. Season with salt and pepper and cook for 3 minutes or until the tomatoes are soft. Break the eggs into a bowl and add the cream. Whisk until smooth add to the tomatoes in the pan and stir to distribute. Allow the eggs to set around the edge. Using a heat resistant spatula gently push one edge of the egg into the middle. Repeat until the eggs are just beginning to set but are still moist and soft. Try to keep the curds large.

Ricotta and Herbs Scrambled Eggs

8 eggs

8 Tbsp cream

25g butter

200g ricotta

4 Tbsp mixed herbs e.g. basil, tarragon, dill, chervil, parsley, chives

Break the eggs into a bowl and add the cream. Season generously with salt and pepper. Whisk until smooth. Heat a non-stick fry pan and add then butter when hot. Add the eggs, turn down the heat and allow the eggs to set around the edge. Using a heat resistant spatula gently push one edge of the egg into the middle. Repeat until the eggs are just beginning to set, but are still moist and soft. Scatter spoonfuls of the ricotta and herbs over the eggs and gently stir to combine without breaking up the curds.

Salmon Scrambled Eggs

8 eggs

8 Tbsp cream

100g smoked salmon pieces

2 Tbsp chopped chives

25g butter

Break the eggs into a bowl and add the cream. Season generously with salt and pepper. Whisk until smooth. Heat a non-stick fry pan and add then butter when hot. Add the eggs, turn down the heat and allow the eggs to set around the edge. Using a heat resistant spatula gently push one edge of the egg into the middle. Repeat until the eggs are just beginning to set but are still moist and soft. Add the salmon pieces and the chives and gently stir to combine without breaking up the curds.
